Pumpkin Cranberry Bread


3 C Flour

1 Tbl + 2 tsp. Pumpkin Pie Spice

2 tsp Baking Soda

1 1/2 tsp Salt


3 C Sugar

1 Can (15 oz) Pumpkin

4 Large Eggs

1 C Vegetable Oil

1/2 C Orange Juice, or Water


1 C Sweetened Dried, fresh or frozen Cranberries


Preheat oven to 350 F.

Grease and flour two 9x5 loaf pans.


Combine Flour, Pie Spice, Baking Soda & Salt in a large bowl.

Combine Sugar, Pumpkin, Eggs, Veg. Oil & Orange Juice in large mixer bowl.


Add Pumpkin mixture to flour mixture; stir until moistened. fold in cranberries. Spoon into loaf plans.


Bake for 60 -65 minutes or until pick inserted in center comes our clean. Cool in pans on wire racks for 10 min. Remove to wire racks to cool completely.


For three 8x4 pans; bake 55 - 60 min.

For five or six 3x5 pans; bake 50 -55 min.
